RATIONAL, the inventor of the Combi-Steamer, has unveiled its latest restaurant solution, the SelfCooking Center®, which frees time for chefs by simplifying the cooking process to the press of a button.
The SelfCooking Center® detects product-specific requirements, the size of the food to be cooked and the load size. Then, cooking time, temperature and ideal cooking cabinet climate are automatically calculated on an individual basis and continuously monitored and adjusted 3,600 times per hour to achieve the desired result.
The SelfCooking Center® cooks up to 15 percent faster than traditional combi-steamers and up to 30 percent faster than conventional ovens, saving both time and money for foodservice departments.
Separate climate control and airflow patterns ensure no cross-contamination between different foods, so there is no flavor or odor transfer, even when different products are cooked simultaneously. The SelfCooking Center® also serves as a Combi-Steamer that allows chefs to bake, broil, roast, steam, blanch, finish and poach-all in a single unit. It can replace traditional appliances, reducing kitchen floor space requirements.
